Chefs Pans
The Chef’s Pan is a saucepan that has been optimized for reductions but is a versatile pan capable of various tasks.
The sides are angled out from the base to provide up to 25% more surface area for evaporation. Depending on the height of their sides Chef’s Pans may be used for sautéing in the larger sizes, and the smaller sizes can be very useful in place of a low saucepan

A Dutch oven is a thick-walled cooking pot with a tight-fitting lid. Dutch ovens are usually made of seasoned cast iron, however many Dutch ovens are instead made of stainless steel, or are ceramic.
Some metal varieties are enamelled rather than being seasoned. Dutch ovens have been used as cooking vessels for hundreds of years. They are called casseroles in English speaking countries other than the United States.
Sauté Pans
The Sauté pan has a large cooking surface and short straight sides around 25% of the diameter of the pan. The large cooking surface provides considerable contact with the heat source and straight sides assist in retaining food items when tossed around in the pan, browning them evenly. A long, high handle allows the cook to agitate the pan for added movement.
